Ever-Changing and Eternal is one of our most creative barrel-aging projects to date. Inspired by one of our employee's favorite desserts, we aimed to replicate the flavors found in a sweet and creamy slice of carrot cake. After months of conditioning golden sour beer on carrot juice, this base blend was sweet, juicy, and had a moderate acidity. Adding components to emulate the nutty, spicey, and creamy characters of a classic carrot cake is where we got creative. 

We really wanted to dial in the vanilla on this club release to have a sweet aromatic quality as well as provide a smooth and creamy texture to the beer. We added a pound of vanilla bean to each oak barrel and let these barrels age for over a month to achieve the perfect luscious vanilla character. After pulling the beer off the vanilla bean we then steeped this sour on cinnamon for a hint of warming spice and added just a touch of nutmeg for the nutty complexity.

Sweet, decadent, luscious, warming, creamy, and smooth are just a few adjectives that come to mind when sipping Ever-Changing and Eternal.
